Recipe: Spinach and Pomegranate muffins

IMG_4982-2kopie

Today’s recipe is something that you can eat for breakfast, for lunch or as a regular snack. It’s sugar free, healthy and absolutely delish! It’s also really easy to make, so I recommend you to just try it out! For the people amongst you that are not a big fan of spinach, don’t worry because you barely taste the spinach in the little cakes!😉

Ingredients:

– 1 banana
– 1 cup oat flour (blend oats until they become flour)
– 1 egg
– 1 tbs nonfat plain greek yogurt
– 1 cup spinach (for the spinach cakes) OR 1/4 cup pomegranate powder (for the pomegranate cakes)
– 5 tbs stevia
– 1 tbs cinnamon
– toppings (Muma seeds for the spinach cakes and shredded coconut for the pomegranate cakes)

Mix everything up and then bake it for 12 minutes at 350F.

Enjoy the recipe and let me know if you actually tried making it!
