Healthy chicken salad

Since we didn’t stay at home during thanksgiving week, we came home to a house with an almost empty fridge. There were some leftovers inside, so I decided to use them for a semi healthy lunch salad! The only things in there that you might see as unhealthy are the pasta and the pesto, even though I chose to use whole-wheat pasta.

Ingredients:
– 1 chicken breast
– 2 tomatoes
– 4 carrots
– 1/2 cup of whole-wheat pasta
– pesto
– salt and pepper

    I am surprised that you say the only thing unhealthy is the pasta and pesto. What about the chicken? True, not as unhealthy as beef. But still…. I have been a pescetarian since I can remember (I eat certain fish only).
